Costa Vida Now Open in Lee's Summit

Costa Vida Fresh Mexican Grill, a fast-casual Mexican chain that started in Utah, has opened its first outpost in the Kansas City market (and the state of Missouri). The Costa Vida at 115 S. Missouri 291, began serving customers yesterday in Lee's Summit.
 
The tortillas are made in-house, and the ordering is done at the assembly counter, a la Chipotle. The menu includes tacos, enchiladas, burritos, quesadillas, nachos, salads and chicken tortilla soup. For drinks, there are fountain sodas and bottled Jarritos. Costa Vida is open from 11 a.m. to 9 p.m. daily. The number is 816-525-8432.
